All Things Fall...day 4


I guess my heart is longing for shorter days, cooler nights and comfort food.

Day three of our fall color tour takes us on a culinary journey.  I have already been scouring the internet and old cookbooks for new crockpot recipes and have been dreaming of home-baked bread.


One of my family's all time favorites is chili.  We love chili!  There are so many different recipes, and types that I could try them all.  One of my personal favorites is cowboy chili.  It's made with stew beef, red chili beans and spicy, spicy!  Mmmmm mmmm.   Chili cook off, anyone?


Another one of my fall favorites is loaded baked potato soup.  We're not talkin' health-food, folks.  In fact, this one is served up with a side of clogged arteries!  

Here's the recipe:

5 cups chicken stock
2 baked potatoes (baked and cooled)
3 cans of cheddar cheese soup
1 small bag of bacon bits - or 1 lb cooked, crumbled bacon
sour cream
sliced green onions
shredded cheddar cheese


Bake 2 baking potatoes in the oven or microwave.  Allow to cool completely.

In a stock pot, add chicken stock, cans of cheddar cheese soup and bacon bits.  Whisk together until smooth and creamy.  

Cut potatoes into 1 inch cubes, leaving the peeling on, and toss into the soup mixture.  Allow to simmer for 20 - 30 minutes.  When soup is heated through, serve with your choice of favorite toppings; sour cream, green onions, extra cheese...maybe even a little more bacon!

Honey, that's good stuff, right there!
